Grilled Sweet And Sour Chicken Kabobs

Ingredients
- 6 Skewers
- 2 Boneless chicken breasts, cut into 1-inch pieces
- 1 large Red pepper, cut into 1-inch pieces
- 1 large Green pepper, cut into 1-inch pieces
- 1 large Red onion, cut into 1-inch pieces
- 1 24-ounce container Pineapple chunks
- 1-1/2 teaspoon Garlic salt and pepper
- Sesame seeds to top, optional
- For the Sweet and Sour Sauce:
- 1 cup Pineapple juice, from a can
- 2 teaspoons of Sweetly Stevia, or to taste
- 3 dashes Unsulfured molasses
- 2 tablespoons Ketchup
- 1/3 cup Rice wine vinegar
- 2 tablespoons Cornstarch
- 2 tablespoons Reduce sodium soy sauce
- 1 tablespoon Water
Directions
- Preheat your grill to 400 degrees and spray with nonstick spray
- In a large bowl, place chicken pieces and vegetables, combine and season with garlic salt and pepper
- Thread skewers with chicken, red onion, green pepper, red pepper, pineapple, and repeat ending with chicken
- Once you’re finished preparing your skewers, it’s time to make the sweet and sour sauce
- In a small bowl, combine Sweetly Stevia and unsulfured molasses
- In a medium sauce pan, place all ingredients for the sauce, mix, and bring to a slight boil
- Reduce heat and let simmer until ready to baste the kabobs
- Place kabobs on the grill and baste with sweet and sour sauce using a brush
- Close the grill lid and let cook for about 3 minutes.
- Rotate kabobs and baste with more sauce
- Keep rotating kabobs every 2-3 minutes for 15-20 minutes until the chicken is no longer pink
- Remove kabobs from grill and serve with extra sauce
- Top with sesame seeds (optional)
- Enjoy!
