Ingredients
- 2 packets Sweetly Stevia® granulated stevia
- 10oz graham cracker crumbs
- 5 tablespoons melted butter
- ¼ teaspoon salt
- 12 packets Sweetly Stevia® granulated stevia (For Filling)
- 5 (8 oz) block cream cheese, room temp
- 1 cup sour cream
- 4 large eggs
- 1 tablespoon 1 tablespoon
- ½ teaspoon salt (For Filling)
- 1 tablespoon pure vanilla extract
- 10oz can no sugar added cherry filling (for topping)
Directions
Preheat the oven to 375°F and prepare a cupcake tin with liners. Pulse the graham crackers in a food processor and then add the melted butter, Sweetly Stevia® granulated stevia, and salt. Mix together and press the mixture into the bottom of the cupcake liners. Bake until the crust solidifies, about 10-13 minutes. Reduce the oven temperature to 325°F and let the crust cool.
Using a mixer, beat the cream cheese until it’s fluffy. Gradually add in the sour cream, Sweetly Stevia® granulated stevia, lemon juice, vanilla extract, and salt. After it’s blended, beat the eggs in one at a time, making sure not to overwork the batter. Use a large scoop to divide the batter into the crust filled liners. Bake the cheesecake bites for about 12-15 minutes, or until the top browns. Top with cherry filling and enjoy!
