When the air gets crisp and the leaves turn red, orange, and yellow, there's nothing quite like lighting a campfire and roasting marshmallows! Whether you and the fam are camping this October, or simply gathered around the kitchen stove, try Sweetly's Homemade S'mores recipe, made with stevia marshmallows that won't cause cavities or pack on unnecessary calories!

Directions

For The Marshmallows:
  • Grab a bowl and place gelatin and ½ cup of the water, set aside for later use
  • In a small saucepan, combine Sweetly Stevia, corn syrup, salt, and the remaining ½ cup of water
  • Place saucepan over medium high heat, cover, and cook for 4 minutes
  • Uncover the saucepan and cook for an additional 7-8 minutes and remove heat
  • Go to the gelatin bowl previously prepared and begin mixing slowly with a mixer and slowly pour corn syrup at the side of the bowl until you’ve used it up
  • Once the syrup is added, increase speed of mixer and continue to mix the ingredients until the mix is thick and lukewarm, approximately 13-15 minutes
  • Add the vanilla extract and finish whipping the mixture
  • In a small bowl combine cornstarch and Powdered Stevia
  • With nonstick cooking spray, lightly spray a 13x9 inch metal baking pan
  • Add the cornstarch and Powdered Stevia mixture onto the pan, enough to completely coat the bottom and sides of the pan
  • Save the rest of the mixture for later use
  • Add in the the gelatin mixture from earlier into the baking pan 
  • Lightly oil a spatula to evenly spread into the pan (be careful mixture is sticky)
  • Dust the top off with some of the cornstarch and Stevia mixture, save the rest for later
  • Allow the marshmallows to sit uncovered for at least 4 hours and up to overnight.
  • Once marshmallows have sat long enough, turn pan out onto a cutting board
  • Cut marshmallows into 1-inch squares 
  • Once cut, put the remaining cornstarch and Stevia mixture onto the cut marshmallows, add more if desired
  • Enjoy!
For The Chocolate:
  • In a saucepan, add cocoa butter and melt
  • Mix in Powdered Stevia and cocoa powder
  • Combine until ingredients are incorporated
  • Remove from heat
  • Stir in vanilla extract
  • Pour chocolate into molds
  • Refrigerate until hardened 
  • Enjoy!
