    Ingredients

    • For the cupcakes:
    • 1/4 cup Half & half
    • 1 tablespoon Vanilla extract or to taste
    • 3/4 cup Powdered Sweetly Stevia or to taste
    • 1/8 teaspoon Salt
    • 3/4 cup or 1 1/2 sticks Butter, softened
    • 3/4 cup Coconut flour
    • 6 tablespoons Unsweetened plain whey protein powder
    • 1 teaspoon Baking Powder
    • 3 Eggs
    • For the frosting:
    • 1 1/3 cups Sweetly Stevia, or to taste
    • 1/2 cup or 1 stick Butter, softened
    • 1-3 tablespoons Heavy cream
    • 1 teaspoon Vanilla extract or to taste
    • 1 pinch Salt

    Directions

    For the cupcakes:
    • Preheat the oven to 325 degrees F
    • Add paper liners to your cupcake tray
    • In a small bowl, combine whey protein powder, coconut flour, baking powder, salt, set aside
    • In a large bowl, cream together the butter and Sweetly Stevia until very light and fluffy
    • Add the eggs to the butter and Sweetly mixture one at a time and beat
    • Add half the coconut flour mixture from the small bowl from earlier to the mixture in the large bowl
    • Combine the half and half and vanilla extract into the mixture and stir
    • Add the rest of the coconut flour mixture to the bowl and mix
    • Scoop the cupcake batter into the cupcake tray
    • Bake for 20-22 minutes or until a toothpick inserted in the center comes out clean
    • Allow the cupcakes to cool
    • Add the frosting 
    • Enjoy!
    For the frosting:
    • In a blender, blend Sweetly Stevia until it reaches a powdered consistency, set aside
    • In a bowl, add the butter and half the Sweetly Stevia and beat to combine
    • Add the Stevia that you previously powdered to the mix until the mixture is very light and fluffy
    • Add the vanilla extract and combine
    • Add heavy cream, 1 tablespoon at a time, until you reach your desired consistency
    • Mix
    • Once the cupcakes are cooled off, you can spread the frosting with a spatula or place the frosting in a zip lock bag and cut the bag on the corner making a tip, and squeeze
