    Ingredients

    • For The Cookies:
    • 2 Eggs
    • 1 cup Canned pumpkin
    • 2 tablespoons Sweetly Stevia or to taste
    • 1/2 cup Butter
    • 4 teaspoon Baking powder
    • 2 cups Flour
    • 1 teaspoon Salt
    • 1/2 teaspoon Nutmeg
    • 1/4 teaspoon Ginger
    • 2 1/2 teaspoons Ground cinnamon
    • 1 cup Walnuts or pecans, chopped, optional
    • For The Cinnamon Cream Cheese Frosting:
    • 1 teaspoon Ground cinnamon
    • 4 cups Powdered Stevia
    • 8 ounce Block cream cheese
    • 3 teaspoons Vanilla extract, or to taste
    • 1/2 cup Butter

    Directions

    For The Cookies:
    • Grab a cookie sheet and lay down parchment paper, set aside
    • Set oven to 350 degree F
    • In a bowl combine Sweetly Stevia and butter until light and fluffy
    • Add the eggs and pumpkin, and mix
    • Combine flour, baking powder, spices, and salt and add to the cookie batter
    • Blend well
    • Grab a spoon and scoop a spoonful of cookie batter onto your prepared cookie sheet
    • Bake in the oven for about 15 minutes
    • Remove the cookies and allow them to cool
    • Top the cookies with frosting
    • Enjoy!
    For The Frosting:
    • In a bowl, add cream cheese, butter and vanilla extract
    • Beat until well blended
    • Add powdered Sweetly Stevia a cup at a time and mix until fully incorporated
    • Add cinnamon
    • Ready to be frosted on your cookies!
